From book club to poolside, this drink is the perfect staple of summer. Take some of the thyme gathered from your Copiana harvest and make this super simple syrup perfect for every summer occasion!

INGREDIENTS

  • 1/2 c. sugar
  • 1/2 c. water
  • 6 sprigs of fresh Copiana thyme
  • 3/4 c. fresh lemon juice
  • 3 c. Club Soda
  • bourbon (optional)

DIRECTIONS

  1. In a small saucepan, combine sugar and water. Add thyme and bring to a boil. Reduce heat and simmer (do not stir) until sugar dissolves, 3 to 4 minutes. Let cool completely; remove thyme.
  2. In a large pitcher, combine lemon juice and cooled syrup. Add soda and serve over ice with a splash of bourbon (if using).
